sweet potato “tortilla’

One of the things I like most about the Whole30 is how creative one can get on it. I mean, I don’t think I would ever have even thought of using a thinly-sliced sweet potato as a sort of tortilla, but it actually is very, very good.

Now this is nowhere near the kind of Chile Relleno one would get at a restaurant: first, there’s no cheese, no rice; hell, we’re lucky to have beans! But it’s also maybe 20% of the calorie load, and way, way more nutrition. It’s almost unfair to call it a Chile Relleno, but since the name simply means “stuffed pepper,” well, I think it’s okay.
