Last summer Keri and I found a cast iron Aebleskiver pan at our local Salvation Army thrift store to add to our growing collection of cast iron. We bought it not fully understanding the purpose of such an oddly shaped pan. It turns out these pans, also called a Monk’s Pan, are used to make pancakes! Aebleskiver are a traditional Danish pancake that is kind of like a cross between a regular pancake and a popover. Usually they are served with a fruit topping but for our pancake of the day we went with a savory filling of peppers and cream cheese. Here’s the recipe:
The Batter
- 2 eggs
- 1/4 cup water
- 1/4 cup milk
- 1/2 tsp salt
- 1 cup flour
- 1 tsp baking powder
- 1 tsp garlic powder
The Filling
- 1 large paprika pepper
- 1 small hot pepper
- 1 ounce cream cheese
The Directions
- Combine all the dry ingredients into a mixing bowl.
- Add the milk, water, and egg. We used 1 egg and skipped the garlic powder.
- Roast the peppers for about 20 minutes in the oven.
- When peppers are roasted, dice the hot pepper and chop the regular pepper separate.
- Blend the hot pepper and cream cheese together.
- Put your Aebleskiver pan on the stove and heat it up.
- When the pan is hot, add a couple drops of olive oil to each indentation in the pan.
- Add about 1 tablespoon of batter to each indentation.
- Add a small dollop of the cream cheese/hot pepper to the center of the batter. Top with a piece of paprika pepper.
- With a chopstick or fork begin rotating the pancake. As it cooks you’ll rotate until it is upside down.
- Remove from pan and start the process again. Don’t forget to add oil before the batter!
