A vegetarian sandwich on home-made wheat with a side of favas

A few weeks ago we were invited to our Portuguese neighbors’ Memorial Day Weekend Barbecue cookout. This was when, in some sort of god-like orchestration, Justin & I were introduced to Josephina’s amazing Fava Beans in olive oil with crushed red pepper & garlic.

I couldn’t remember the exact recipe, so I sort of ad-libbed when I went to make them independently.

We bought a 2lb bag of frozen fava beans and boiled them until tender, about 20minutes. Rinse with cool water, drain & cool. Toss with olive oil, garlic, feta, tomato, sliced red onion and a hard, dry cheese and black pepper. Really, really good. Makes great party food.
