Easy Peasy Carmel Corn

Okay, so this isn’t lowfat. In fact, the very LAST thing this could be is lowfat, however, it’s not the worst thing in the world and you can really dress it up with some nice antioxidant nuts or berries if your mood suits.


For this recipe I used some chopped & whole almond pieces, but I considered using dried cranberries, too. I think that would be just spectacular.

You’ll need a very large pot and a small pot.

In the large pot, pop about 1/2c kernels. I don’t know how many I used, but you want around 5cups of popped corn.

When the kernels are finished popping, remove them from heat and warm up the smaller pot.

you’ll need:

  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 2 tablespoons corn syrup
  • 1/4 teaspoon salt

Melt & mix all this together in the smaller pot and let boil for a few minutes without stirring. Remove from heat and add

  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon baking soda

Stir very well. Add any extra stuff like nuts, granola, dried berries, dark chocolate (antioxidant) pieces or whatever. Pour this mixture into the big pot with the popped corn and stir well to coat.

Let cool a little then transfer to storage container.
