Cous Cous Salad & Ricotta Bagel

So we realized the one thing we forgot to get on our shopping expedition was lettuce! gah! We have a salad almost every night, and so tonight we didn’t have time to go to the store we decided we’d try a cous cous salad:

(for two)

  • 1 granny smith (or a sour) apple
  • 1 macintosh (or a sweet) apple
  • 1/2 red onion
  • some cubed feta cheese
  • 1c cooked cous cous


  • 1tsp mayo
  • 1tsp mustard
  • 1tbs vinegar
  • seasonings

Pour cold, chopped ingredients over warm cous cous. Serve dressing on the side.

and a Ricotta/Mozzarella Bagel

1 bagel, halved and spread in this order:

  1. 1tbs ricotta cheese
  2. 1 plum tomato thinly sliced
  3. paper thin slices of red onion
  4. 1 sprig of fresh oregano
  5. 1 tsp shredded mozzarella

Bake @ 350 until lightly browned.

Super duper deelisshess… salaciously! srsly. The whole meal took less than a half hour to prepare, is healthy and warm and chock full o’lovin.
