Homemade Cornbread to go with the Taco Soup, yeah!

in a small bowl mix

  • 1c Milk
  • 1c Cornmeal

let mixture stand for 5 minutes or until milk is absorbed into cornmeal.

in a separate bowl mix

  • 1c Flour
  • 1/4c White Sugar
  • 1.5 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 Egg
  • 4tbs Vegetable Oil

Mix two parts together and pour batter into a baking dish. I prefer a small cast-iron pan. Bake at 400 for 30-35 minutes.

Cornbread is done when it has a nice golden crust and a knife poked in the center comes out clean.
