Cookies Like Nanny Used to Make ‘Em

A variation on Justin’s Nanny’s Oatmeal Chocolate Chip Cookies

  • 1/2 cup butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2/3 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt (omit if used salted butter)
  • 1 quick-cooking oats
  • 1/2 cup rolled barley
  • 1/8 cup mix ground flax seed & wheat germ
  • 1/2 cup semisweet chocolate chips

add up to a cup (or maybe a tiny bit more is okay) of the following optional items

  • craisins
  • dried cherries
  • raisins
  • or any dried fruit
  • chopped almonds
  • chopped walnuts
  • or any chopped, sliced or slivered nut

Nutrition information is for the cookie without any chocolate or optional items. Also note these are really large cookies, probably 4″ in diameter. While 141 calories w/o chocolate is kinda hefty, so is the cookie, and with a glass of milk could make a fairly satisfying breakfast. The extra good: the wheat germ and flax meal bump up the nutrition and add fiber, and these are relatively low in sugar for a cookie (at 141 calories we can safely accept 14g of sugar in which there are only 5).

The bulk of the calories and fat are in the butter. You can substitute for your favorite fat, but I love butter, so butter it is. You could easily repair this by substituting applesauce or some other fruit puree in place of the butter, but for taste & texture’s sakes, I would only go half and half.
