Yes, it actually is the most beautiful thing I have ever baked.

Amaze your friends with this ridiculously easy recipe:

  • 3 cups shredded coconut
  • 2/3 cup sweetened condensed milk
  • pinch or two salt
  • 1 teaspoon vanilla extract
  • 1-2 egg whites, whipped to stiff peaks (think: meringue)

PREPARATION:

Generously grease baking sheets or use parchment. These are very very sticky baked goods.

Combine all ingredients except egg into a thick coconut paste. Fold whites in to mixture. Drop by teaspoonfuls, 1 inch apart, on prepared baking sheets. Press down with the back of spoon to even thickness. Bake at 350° for 15 minutes, or until macaroons are golden brown. Cool 5 minutes; remove from baking sheet.

Makes about 36 coconut macaroons.
