Originally, we were going to have Blini today but I (Justin) used the wrong recipe and none of them turned out. So, I decided to go with traditional Buttermilk pancakes topped with blueberry preserves.
- 1 1/4 cups all-purpose flour
- 1 egg
- 1 1/4 cups buttermilk
- 1/8 cup white sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/8 cup vegetable oil
- 1 cap full of Vanilla extract
- Combine all ingredients in a large mixing bowl and blend until smooth.
- Heat your pan.
- Pour batter onto pan. I poured just less than 1/4 cup for each pancake.
- Cook it!

oh my! now i’m very hungry.
Is that really all there is to it because that’d be flabegbrasting.
It really is that simple. I don’t know why people buy Bisquick, ever. Pancakes are a peasant food that people have been eating for, I dunno, centuries, I’d guess.
