Blueberry Upside Down Cakes

Individual Sized Cakes Made in a Muffin Tin
(because they’re sooper cute that way and so we don’t overdo it…)

Ingredients (yields 12 cakes)

  • 1 box White Cake Mix (or make your own if you’re feelin’ up to it)
  • 1c fresh blueberries
  • pinch of brown sugar for each cake
  • 1 tap of cinnamon
  • very thin pat of butter for each cake

Wash, rinse and tap dry fresh berries or thawed berries. In a warmed muffin tin, place a pat of butter in each well. Add a pinch of brown sugar and cinnamon (up to you, if you want to add more or less, try it!).

Spoon in a few fresh berries. Make cake mix. Add rest of berries to cake mix.

Spoon into muffin tin making sure some of the cake batter gets to the very bottom (doesn’t get clogged up with berries) by using a spoon to move them out of the way a little bit.

Bake at 350ยบ until cake is lightly browned and not at all jiggly.

I think the berries were too moist and too heavy for the little muffin pan. maybe if it were just the berries on the bottoms and not in the cake it would have worked out better… BUT it’s really yummy and I don’t care that it looks kinda crappy. ๐Ÿ™‚ Even so, I’d bet a pretty plate, a sprig of mint and maybe some sort of glaze would make it look purposeful enough that nobody’d know the difference.
